Jerk Chicken Thighs with Pineapple Hot Glaze
Sticky, spicy jerk chicken thighs finished with a Pineapple Hot glaze — a quick weeknight taste of the Caribbean.

Ingredients

8 boneless chicken thighs, skin on

2 tbsp jerk seasoning (dry rub or paste)

1 tbsp vegetable oil

3 tbsp GG's Authentic Pineapple Hot

1 tbsp soy sauce
-
1 tbsp honey

1 lime, juiced

2 spring onions, sliced (to garnish)
Method

Pat the chicken thighs dry and rub all over with the jerk seasoning. Leave to sit for 10 minutes while you heat the oven to 200°C (fan 180°C).

Heat the oil in an ovenproof frying pan over medium-high heat. Add the chicken skin-side down and fry for 4–5 minutes until golden.

Flip the chicken, then transfer the pan to the oven. Roast for 15 minutes.

Meanwhile, mix the GG's Authentic Pineapple Hot, soy sauce, honey and lime juice in a small bowl.

Remove the pan from the oven, brush the glaze generously over the chicken, and return to the oven for a further 5 minutes until sticky and cooked through (juices run clear).

Rest for 2 minutes, then scatter with spring onions before serving.
Serving tip: Serve with steamed rice and peas or a simple mango salad to balance the heat.
