Jerk Sea Bass Traybake with Cucumber & Mango Mild

Quick oven-baked jerk sea bass fillets, topped with GG's Cucumber & Mango Mild for a fresh, fruity finish. On the table in under 30 minutes.

Ingredients
4 sea bass fillets (skin on)
1½ tbsp jerk seasoning (dry or paste)
1 tbsp vegetable oil
1 red pepper, sliced
1 red onion, cut into wedges
1 lime, halved
4 tbsp GG's Authentic Cucumber & Mango Mild
Salt, to taste

Method

  1. Preheat the oven to 200°C (fan 180°C).

  2. Pat the sea bass fillets dry, then rub with jerk seasoning, oil, and a pinch of salt.

  3. Spread the red pepper and red onion across a baking tray and roast for 8 minutes to soften slightly.

  4. Push the vegetables to one side, lay the fillets skin-side up on the tray, and roast for a further 8–10 minutes until the fish is just cooked through and flakes easily.

  5. Squeeze the lime halves over the tray as soon as it comes out of the oven.

  6. Drizzle with GG's Cucumber & Mango Mild just before serving.

Serving tip
Serve with coconut rice or a simple green salad, with extra Cucumber & Mango Mild on the side for spooning over.
